The mission of “New Bulgarian Cuisine” is associated with rethinking traditional Bulgarian cuisine and its regional varieties in the context of modern gastronomy, through the application of innovative culinary techniques. The idea of “New Bulgarian Cuisine” is to affirm the idea that the transformation of gastronomic heritage, through innovative culinary technologies, will help position Bulgaria as a destination for contextual types of tourism and will increase the quality of the restaurant product at the national level. The culinary heritage of Bulgaria is more than recipes and products – it is a living history that combines culture, the influence of different ethnographic groups, the traditions and spirit of the regions. The idea of the creators is for Bulgaria to be recognized in the world as a destination with a unique gastronomic heritage that attracts tourists, inspires producers and unites generations.

The association's main goal is to contribute to the preservation, promotion and development of traditional Bulgarian cuisine, as an integral part of the national culture and identity.
